TothaKoora Tona Tona - Amaranthus Kadhi

Ingredients:
1 Cup - Chopped TothaKoora
2 Cups - Sour Curd
2 TeaSpoons - Besan
Salt as per taste
2 Pinches - Turmeric
1 Cup - Water

Masala:
1 TableSpoon - Grated Ginger
5 - Green Chillies
1/2 TeaSpoon - Cumin Seeds
1 TableSpoon- Dhaniya
2 tableSpoons - Grated Coconut
2 - Garlic Cloves [Optional]
TothaKoora / Amaranthus

Tadka:
1 TableSpoon - Oil
Methi Seeds
Mustard Seeds
Cumin Seeds
Hing
1 - Red Chilli
Karvepak

Procedure:
1. Add water to the curd and whisk thoroughly.
2. Grind all the ingredients mentioned in above Masala section.
3. Add besan, salt, turmeric and the ground masala to the whisked curd.
4. Heat Oil in a pan and prepare tadka.
5. Add tothakoora to the pan and saute it.
6. When tothakoora gets soft add the curd mixture and mix well. Add water if consistency is thick.
7. When it boils, mix well and switch off the stove.
8. Garnish with cilantro.
9. This goes well with Plain rice. Can also be served with Chapaties.
