Rava Kesari

Ingredients:
1 Cup - Soji Coarse Rava
1 Cup - Sugar
2 1/2 Cups - Milk
4 TableSpoons - Butter / Ghee
2 Pinches - Cardamom Powder/Elaichi Powder
1/2 Cup (All together) - Kismiss, Cashew Nuts Pieces and Almonds Pieces [Optional]

Procedure:
1. Take a wide pan and heat butter/ghee.
2. Add kismiss and nuts to the butter and fry them on low flame.
3. Once kismiss puffs up and the nuts start to turn light brown, add Sooji Ravi and fry it until the rava turns light brown. All this has to be done on low-medium flame and has to be sauted continuously.
4. Add milk and let the milk boil. Keep mixing in-between, so it doesn't stick to the bottom of the pan.
5. When the milk starts to boil, add sugar, cardamom powder and keep stirring. Adding sugar will dilute the dish, but keep stirring until 80% of the liquid is evaporated.
6. At this point check if the sooji is cooked, if not add more milk and cook.
7. Switch off the stove and close the pan with a lid.
8. Serve this sweet after 10 minutes.

Note: You can substitute milk with water, but the dish would taste better when made with Milk.

Chocolate Rolls

Ingredients:
1 Cup - Sweetened Chocolate Powder
[I used Cadbury Drinking Chocolate Powder]
1 Cup - Marie Biscuit Powder (12-15 biscuits make 1 Cup biscuit powder)
3-4 Table Spoons - Milk
3 Table Spoons - Butter
3 Table Spoons - Sugar

Required:
2 Plastic Covers



Procedure:
1. Mix chocolate powder and biscuit powder well.



2. Add 2 tables spoons of milk first and mix well. Keep adding little milk at a time and mix well. This dough should be similar to chapati dough consistency.

3. Take the 2 plastic covers and grease them with butter on one side.
4. Keep one plastic cover, grease side facing up and place the above chocolate dough on top of it and place another plastic cover on top of it with grease side facing down.

5. Roll the dough 1/8th inch thick and remove the top plastic cover.

6.In a cup mix butter and sugar and spread this on top of the flattened dough.

7. Roll the flattened dough by pushing the bottom plastic cover.



8. Keep this chocolate roll refrigerated for 3 hours.
9. Cut the rolled dough horizontally 1/2 inch thick and serve them.

Note: If making this dish with more quantity, make the dough into portions before flattening it.

Rava Laddu

Ingredients:
1 Cup - Sooji Rava
1 Cup - Fresh Shredded Coconut
1 Cup - Sugar Powder
10 - Kismiss
10 - Cashew Nuts, Cut into small pieces
1/2 Tea Spoon - Cardamom Powder
2 Table Spoons - Ghee
Milk for making the laddu

Procedure:
1. Heat the pan and on a medium flame dry fry sooji ravi until it turns light brown.
2. Take the sooji ravi into a bowl.
3. Dry fry shredded coconut until it turns light brown.
4. Mix this coconut into sooji rava and add sugar powder immediately and mix well.
Note: The heat from the coconut melts the sugar and helps in making the laddu's, therefore mix the sugar powder right after the coconut is roasted.
5. Heat ghee in a pan and fry kismiss and cashew nut pieces.
6. Add kissmiss, cashew nut pieces and cardamom powder into the sooji rava and mix well.

7. Sprinkle milk on a portion of this mixture and take that portion and make it into a laddu with your hand.
8. Repeat the same and make laddu's with the remaining mixture.

Note: Pouring all the milk into the mixture at once might cause the mixture to loosen which makes it difficult to make the laddu. Therefore keep sprinkling some milk on a portion of the mixture and make laddus using that portion.

Wheat Biscuits

Ingredients:
2 Cups - Wheat Flour
2 Pinches - Salt
2 Table Spoons - Butter
Water
Oil for deep frying

Sugar Syrup:
1 Cup - Sugar
1/8th Cup - Water
1/4th Tea Spoon - Cardamom Powder [Elachi powder]

Procedure:
1. Mix wheat flour, salt and butter along with water and knead the dough thoroughly. The dough should be hard.
2. Cover the dough and keep it aside for 30 minutes.
3. After 30 minutes, knead the dough again and make it into 4 portions.
4. Heat the oil. Once the oil is hot and ready to fry, keep it in medium flame.
5. Roll the dough flat, similar to chapati. It should be 1/3rd CM thick.
6. Cut the chapati in circle shape using a bottle cap or diamond shape using a knife.
7. You can knead the remaining dough at the end and make chapati again and cut them.
8. Fry these in oil until they turn golden color.


Note: Make sure the oil is in medium flame through out the cooking time.

Sugar Syrup:
1. Add sugar and water and make thick sugar syrup.
    When the sugar syrup starts to form form, this is the indication that the syrup is ready.

2. Add cardamom powder to the syrup and mix it.
3. Add the above prepared wheat biscuits into the sugar syrup, mix well and switch off the stove.
4. Once it cools down, you can separate the wheat biscuits and store them.

Doodh Peda / Pala Kova - From Scratch

Ingredients:
2 Liters - Whole Milk
1/2 Cup - Sugar

Note: Use a wide and thick Pan to make kova



Procedure:
1. Boil milk in a pan on a cook top.
2. Once the milk starts to boil,  stir continuously until the milk gets thick.
3. At this point add sugar and put the stove on a medium flame.
4. After sugar is added, stir continuously and be cautious not to burn it.
5. Stir until kova starts to stick to the spatula and starts to come off the pan.
6. Once done, switch off the stove and cool it.

7. Once the kova cools down, make balls out of the kova.
    - Apply ghee to both of your hands and take some kova, make it into a ball and press flat.

Doodh Peda - Microwave Approach



Ingredients
2 cups - Instant Dry Milk (Milk Powder - rice cooker cups)
1 can - 14oz - Sweetened Condensed Milk
1 stick 4oz - Unsalted Butter
Elaichi Powder

Decoration:
Almonds or cashews or pistachios or raisins
Paper cookie cups (smallest size)

Procedure: 
  • In a deep microwave safe dish, melt the butter.
  • Add Milk Powder, condensed milk and mix well.
  • Cook in the microwave for 3 minutes, stir well after every minute. Put elaichi powder after 2 minutess of heating. 
  • After 3 minutes of heating, mix well again and leave aside for the mixture to cool down enough to handle. Do not allow it to cool down for a long time, as it will get hard.
  • Once the mixture cools down, grease your hands and make balls.
  • Gently press the balls and flatten them to shape (round and flat).
  • After the pedas are prepared, put some coarsely powdered pistachios in the cookie cups and then put the pedas on top, at the end top it with sliced pieces of almonds (or other nuts or raisins).
Note: 
  • Use gloves to hold the glass dish.
  • Make sure to use a deep glass dish, as the mixture will splutter inside a bit.
  • You can also add a bit of saffron while mixing all ingredients beforehand, this will make it a bit darker / orange color peda's.
