Appadala Undalu / UradDal Balls

Ingredients:
1 Cup - Urad Dal Powder
2 TeaSpoons - Red Chilli Powder
1/2 TeaSpoon - Salt (or as per your taste)
1/4th TeaSpoon - Hing
3 TeaSpoons - Sesame Oil
Water

Procedure:
  1. Mix all the above dry ingredients in water. 
  2. Then add sesame oil and knead well.
  3. The dough consistency should be similar to chapathi dough.
  4. Make small balls out of the dough and press gently between your palms.
  5. Appadala Undalu is ready to serve.
  6. This is to be served with white rice and ghee. 
  7. This also goes well with Pesara Pappu Allam Pulusu (Moong dal and Ginger stew).
Note:
This dish has some raw taste to it, that mostly elders enjoy.

Green Moong Sprouts Snack

Ingredients:
1 Cup - Sprouted Green Moong / Sprouted Pesalu
1/2 - Onion, chopped
1 - Tomato, chopped
1/4th Cup - Carrot, chopped
1/2 Cup - Cucumber/Kheera, chopped
1 - Small BeetRoot, Chopped [Optional]
2 - Green Chillies, chopped (or per your taste)
1 TableSpoon - Lemon Juice
1/4th TeaSpoon - Black Pepper Powder
Kottimeera, chopped
Salt

Procedure:
For Moong Sprouts:
Soak Green Moong or pesalu over night. Next day take it out of the water and spread the moong in a bowl and close the bowl with a lid. Following day you should see moong with sprouts.



For Snack:
Mix all the above items and serve.

Sweet Corn Masala

Ingredients:
1 Cup - Sweet Corn
1/2 TeaSpoon - Chat Masala Powder
1/4th TeaSpoon - Chilli Powder (or per your taste)
1 TeaSpoon - Lemon (or per your taste)
1 TableSpoon - Butter
Salt to taste

Procedure:
1. Take corn in a microwave safe dish. Splash some water over it and microwave it for 1 minute.
2. Take it out of the microwave and add butter, salt and microwave for another minute or until the corn becomes soft.
3. Take it out of the microwave, add chat masala powder, chilli powder, lemon and mix well.
4. Corn masala is ready to serve.
5. Serve hot.

Note:
- You can follow the same steps and prepare this dish on a cook top.
- I generally use frozen corn for this recipe.

Mooli - Side Dish

Ingredients:
1 Cup - Mooli/Mullangi, cut in semi-circles
3 TableSpoons - Lemon Juice
3 Pinches - Turmeric
1/2 TeaSpoon - Salt (Or Per Taste)

Tadka:
Oil
Mustard Seeds
Jeera
Hing
1/2 TeaSpoon - Red Chilli Powder

Procedure:
  1. Mix all the above ingredients.
  2. Prepare tadka and allow it to cool before adding it to the above mixture. Otherwise, due to the lemon in this recipe, the hot oil from tadka will make this dish bitter.
  3. Keep this aside for 2 hours.
  4. Mooli, Side dish is ready to serve.
  5. This can be served as a side dish for Plain Dal Rice (Utta Pappu), Curd Rice or Plain Tadka Bhajis (Mudda Kooralu - That are usually cooked over steam and are somewhat bland).
  6. Also goes well with Chapaties.

Mango Ginger / Mavidi Allam - Side Dish

Ingredients:
1/4th Cup - Mango Ginger, Peel and Cut into 1/2 inch long pieces
1/4th Cup - Carrots, Cut into 1/2 inch long pieces
5 - Green Chillies, CutVertically
1/4th Cup - Bitter Gourd, Cut Vertically [Optional]
4 TableSpoon - Lemon Juice
Turmeric
1/2 Teaspoon - Salt [Or Per Taste]

Procedure:
  1. Mix all the above ingredients and keep it aside for 2 hours.
  2. Mango Ginger side dish is ready to serve.
  3. This can be served as a side dish for Plain Dal (Utta Pappu), Curd Rice or Tadka Bhajis (Mudda Kooralu - That are usually cooked over steam and are somewhat bland).
  4. Also goes well with Chapaties.
With Bitter Gourd
Note: If using bitter gourd, serve this dish next day, this way the bitter gourd is soaked in the lemon juice and the bitterness is cut down.
